Learn to cook authentic Italian food from a professional chef! You can book individual, couple or group lessons, as well as special team-building experiences, and learn the secrets of pizza dough and home-made pasta, as well as seasonal toppings and special Apulian recipes.

Meet with the Chef at 10:30 am at the Aia and go get your ingredients! Depending on the season and the menu, you may head to the forest, the Aia’s amazing vegetable patch, or the local produce market. Once you have harvested or bought the fresh ingredients that constitute the core of each dish, it’s time to hit the kitchen and learn some magic!

Our chef will teach you how to transform your basic ingredients into delicious, authentic Italian recipes.


Menus depend on the season and the availability of the produce and they may feature the following recipes:

  • Pappardelle with cauliflower cream sauce and sardines from the Ionian Sea

  • Fall vegetable tempura

  • Argentine Angus fillet on celeriac cream and burrata cheese

  • Risotto with cardoncelli mushrooms and Martina Franca sausage

  • Pumpkin risotto with Apulian goat cheese

  • Red rice with brie and kale chips

  • Mezzi paccheri di grano Arso with local chard and cuttlefish
